Vines are situated on granite and gravel soils, crushed by foot, and macerated in Amphora vessels. The wine is then fermented spontaneously using low-intervention methods and the result is unfined and unfiltered.
It's fresh, vibrant with a sharp acidity, and very aromatic--that's partly due to the Caiño grape aging on fine lees with the minerality typical of a wine of Atlantic origin. You'll also experience black berry aromas with a hint of spiciness and some pepper.

About the Producer
Galician natural winemaker Constantina Sotelo took over the family vineyards in 1985: free standing vines planted in 'the cradle of Albariño' the Salnés Valley a few meters from the Ría de Arousa. Constantina began making her own wine in 1999 and in 2010 was making her first natural wines with no interventions. She personally and manually oversees all steps in the farming and winemaking process, to ensure the least possible intervention and achieve honest and environmentally friendly viticulture under the protection of the lunar calendar. Constantina Sotelo ferments her wines in a variety of ways, including reclaimed chestnut barrels, terracotta amphorae, stoneware amphoras, spherical earthen amphoras, terra-cotta bottles and concrete eggs. Her wines reflect her vineyards and the beautiful natural environment. All her wines are made with natural components are unfined/unfiltered and have zero added sulfur: they are simply natural wines.
